1/2 cup (1/2-inch-thick slices) portobello mushrooms
1/8 teaspoon kosher salt
1/4 cup bottled pesto
1/4 teaspoon freshly ground black pepper
3/4 cup skinless, boneless, shredded rotisserie chicken
1/2 cup fresh sweet corn kernels
2 ounces goat cheese, crumbled
2 tablespoons chopped fresh basil
How to Make It
Preheat oven to 425°.
Lightly coat a round perforated pan with vegetable cooking spray, or put a pizza stone in the oven while it preheats. Place pizza dough on a lightly floured surface, and roll it into a 12-inch circle. Place dough on prepared pizza pan or stone, and bake for 5 minutes.
While the crust is baking, coat a small nonstick skillet with vegetable cooking spray and heat over medium-high heat. Add the mushrooms and salt, and cook, stirring occasionally, 4–5 minutes or until softened and lightly browned; set aside.
Spread the pesto over warm crust, leaving a 1/2-inch edge. Sprinkle pepper evenly over crust, and top with chicken, corn, mushrooms, and goat cheese. Bake 12–15 minutes or until crust is cooked through and cheese is golden brown. Remove from oven, and sprinkle with basil. Cut into 8 wedges; serve hot.
Wow! This was awesome. I used a whole ear of corn cooked according to https://www.youtube.com/watch?v=RzYtMeIFH8o (you gotta try this!). I used more like a half small bottle of pesto, as that's what I had left and didn't want to waste it. My husband is not fond of green food, but loved this. He kept saying "this doesn't taste like pizza, but it's delicious. Ate a double helping. To me, it tasted like the best gourmet pizza at the high-dollar pizza places.
Very good! My husband and I both loved this pizza and it is very easy to make. We picked up a pre-made pizza dough from Papa Murphy's and it was excellent with all these toppings on it. We also increased the goat cheese to probably 4 ounces because we love goat cheese!
We absolutely loved this dish, but to save time we used a pre-cooked pizza crust!
We are big goat cheese fans, so we added a little more goat cheese, more like 3 ounces.
This was a huge hit with my husband and I, and we will definitely make it again!
