Chicken Fiesta

Ingredients

  • 1/2 cup butter or margarine
  • 1/2 cup all-purpose flour
  • 4 cups chicken broth
  • 6 cups chopped cooked chicken
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • Fiesta Cornbread

How to Make It

  1. Melt butter in a heavy saucepan over low heat; add flour, stirring until smooth. Cook 1 minute, stirring constantly. Gradually add broth; cook over medium heat, stirring constantly, until thickened and bubbly. Stir in chicken, salt, and pepper. Spoon creamed chicken over Fiesta Cornbread squares. Serve immediately.
