Chicken Enchilada Casserole

    I gave this 3* because it IS a good solid recipe but unless it was a casual potluck or buffet, I wouldn't serve it to company. I made this for a diet dinner - VERY good! I lightened some of the ingredients from the original recipe. I also increased the servings because an 8x8 (half the recipe) made 6 portions. The original recipe, halved, called for 9 tortillas and I put 9 quarters on each of three layers and that was plenty.

    This is great. My family loved it and asked me to make it again (one week later). Served it with beans, rice & salad topped with guacamole. Really good leftover too. Good enough for company, but great for family dinner too. I charred the poblanos and peeled them before dicing them. I also used 3 cups cheddar and only 1 of Jalapeno Jack to cut the heat very slightly. Other than that - this recipe is awesome - the sauce is restaurant quality.

    This is an excellent tasty recipe but "very rich," so serve small portions. It makes a big 9/13 pan using two Rotisserie Chickens so I will make half next time for my family in a 9 x 9 inch pan. I would also suggest serving Spanish rice, Refried Beans, Chips and fresh Salsa for a great "make-ahead" company meal. FYI: I used Hot Fire-Roasted Green Chili Peppers (with lime juice ,cilantro & garlic) which helped make it spicy and delicious. (Mezzetta Brand) Our family loved it and I will make it again, especially for an easy company meal.

    This recipe is awesome! My family usually groans when I make enchilada casserole, because I've been on a never-ending quest for the very best recipe. The quest is over--this is it! They all gave it a thumbs-up, and that NEVER happens with my picky eaters! I split the recipe into two smaller casseroles and froze one. They were the perfect size for our family of 4.

    This dish was absoutley wonderful!!! Loved it and will add it to my family favorites. Great for a large group of people.
