LOVE this recipe!!! This is the perfect healthier version of a traditional comfort food. The dumplings are amazing. I will make this many times to get us through the long and cold Chicago winter.

I make this all the time! Great winter dish! I double the chicken mixture and freeze half of it for a quick weekday meal. Don't skip the parsnips--they add a great lemony flavor.

It took an awfully long time to make (about an hour 40 minutes including all prep time, chopping, etc), but it was tasty and easy enough, and there was enough downtime that the dishes were almost all done by the time everything was ready. I made a few alterations. I fried one piece of bacon in the beginning and used the grease from that to brown the chicken. (I added the crumbled bacon with the peas.) I didn't have chicken stock so I used veggie stock, which is thicker and more flavorful.
