Preheated oven to 400 degrees. Slice 2 limes. Peel pit and slice 2 mangoes. Arrange 4 large pieces of parchment paper (each ~ 15 inches in diameter) on a work surface. In vented of each place 1 (7 oz.) boneless skinless chicken cutlet pounded thin. Top each with mango slices, lime slices 1 small slice of ginger and 1 T. Chopped cilantro. Drizzle each with 2 tsp. Olive oil. Sprinkle with salt and pepper. Fold up parchment paper to seal in ingredients. Tuck edges of parchment under chicken, place on a rimmed baking sheet. Bake for 20 minutes of until cooked through. Carefully unwrap parchment and transfer chicken and fruit to serving plates. Garnish with extra chopped cilantro, if desired.
