Easy to make and kids enjoyed it. However, it was a little bland. I would use a smoked sausage and increase the amount (substituting chicken/turkey for pork to maintain calories). Next time I will also experiment on the heat perhaps adding one of the following: fire-roasted diced tomato, hot sauce, cayenne. I used brown rice instead of white (which does double cooking time but adds more substance to the meal). Recipe makes a lot, you will have leftovers.

I like this recipe...easy and great for leftovers. I would also suggest adding a bit more spice while cooking. The only thing I am not quite sure of is the serving size and calories. I really.really.really wish they would add a easy to measure serving size to calories. IE: 2 cups = XXX calories.

We enjoyed this very much. It is time consuming but easy to make. Next time I might like my portion a little spicier but that is personal preference. Very filling and it made a lot.
