This is one of my favorite make ahead recipes as I try to prep a lot on weekends since I get home late from work. I use whole boneless, skinless chicken thighs, skip the skewers, and broil for about 6-8 minutes per side. The next day, they are still juicy. Excellent flavor, be sure to marinate for several hours.

Very easy to make, did mine without the skewers. My girlfriend ate hers on a salad. Marinated for an extra 2 hours. Great to prepare ahead and broil when needed.

Followed another reviewer and marinated the thighs whole, then broiled 8 min per side. Fantastic -- great flavor and so easy. Served with coconut jasmine rice. Husband said definitely a keeper!
