  • 3 ounces ready-to-eat roasted skinned, boned chicken breast, chopped
  • 2 cups torn romaine lettuce
  • 1 tablespoon (1/4 ounce) grated fresh Parmesan cheese
  • 2 tablespoons white wine vinegar
  • 1 tablespoon water
  • 1 1/2 teaspoons olive oil
  • 1 teaspoon fresh lemon juice
  • 1/8 teaspoon black pepper
  • 1/8 teaspoon Dijon mustard
  • 6 fat-free Caesar-flavored croutons


  1. Combine first 3 ingredients in a bowl; toss gently. Combine vinegar and next 5 ingredients (vinegar through mustard); stir with a whisk. Add to lettuce mixture; toss well. Top with croutons.
