3 ounces ready-to-eat roasted skinned, boned chicken breast, chopped
2 cups torn romaine lettuce
1 tablespoon (1/4 ounce) grated fresh Parmesan cheese
2 tablespoons white wine vinegar
1 tablespoon water
1 1/2 teaspoons olive oil
1 teaspoon fresh lemon juice
1/8 teaspoon black pepper
1/8 teaspoon Dijon mustard
6 fat-free Caesar-flavored croutons


Combine first 3 ingredients in a bowl; toss gently. Combine vinegar and next 5 ingredients (vinegar through mustard); stir with a whisk. Add to lettuce mixture; toss well. Top with croutons.
