Chicken and Broccoli Rice Bowl

    I found this to taste very "pre-processed". I'm not a huge fan of processed cheeses like Velveeta, but I figured I'd give it a shot. I think if I do it again I'll make my own brown rice (the pre-done one I bought tasted a little plastic). I enjoyed the addition of the almonds, though. Edit 10/14/12 - Made this again, only this time I prepared my own brown rice. Made all the difference in the world! It's not a recipe that's jam packed with flavors, but it's quick and easy.

    This is a good recipe if you have limited time to prepare something for dinner. The velveeta cheese may not be for everyone, but we enjoyed it. I also steamed the broccoli in the microwave to retain nutrients and keep a crisp consistency.

    Best issue of Cooking Light EVER! So many of the "40 Fast and Easy Meals" and "20-Minute Entrees" have been cut out and glued into my cookbook of "keepers." I have decimated my April issue. For this recipe I used 4oz instead of 3oz Velveeta simply because it was easier to measure - the manufacturer had pre-measured portions on the packaging. Brown rice does have a strong flavor, that is much different from white rice, but the baby liked it so all is well. Left out the almonds so I could feed it to her.

    I really enjoyed this recipe. The serving size is a little bit small, but if your prioritizing your daily calories, you can have a little more anyway. Could have been just a tad bit cheesier, but I didn't want to add the to the calorie and fat content. Also, I added a lot more almonds, but that was just a preference thing. I loved the crunch they added to the dish. Overall, very tasty, fast, and easy.

    It was okay but it had WAY too much broccoli. I even tried reducing it by a cup and it was still too much. The broccoli taste completely overpowered everything until I couldn't even taste the rice or cheese. I also added A LOT more almonds otherwise it was like eating a gushy gooey broccoli tasting mess. The serving size is also very small. I am 110 pound girl and I almost finished 2/3rd of it for dinner in one sitting. It could be a good sizing for children but I doubt broccoli and almonds are their forte. I suggest trying very sharp cheddar for more taste, perhaps a breaded chicken or something with a bit more seasoning to it and less broccoli for a more flavorful meal.

    I liked this a lot. It's good comfort food, and very easy to prepare. I precisely measured my serving (on a limited calorie diet at the moment) and felt satisfied. I'll make this again.

    Delicious! The flavor is really good and the almonds definitely add a great flavor and crunch. My entire family loved it. I found a great product at Trader Joe's -- frozen brown rice packets that cook in the microwave in 3 minutes. It comes in a box with (3) 10 oz. packages of rice. The rice is not as chewy as other brown rice that I've tried - my family loves brown rice but this would be good for those who don't care for the usual texture of brown rice. Also, I like to cook my chicken breasts on a grill pan and then slice them into bite-size pieces. This makes the pieces tender and moist with no chewiness/rubberiness. I'm picky about my chicken texture. The grill pan does such an amazing job - better than a grill! I got the idea from another CL recipe.

    This was so quick and easy to make!! I used the frozen broccoli that you microwave, rotisserie chicken and added chopped red pepper. My whole family loved it and no leftovers!!

    I think it needs a bit more pepper, but we really liked it. We used brown rice that we made with our rice cooker in advance, so that enabled us to bump up the amounts to make enough for lunch leftovers. We also used organic cream cheese with acidopholis in place of the Velveeta. It turned out fine. The toasted almonds are a MUST. They make the recipe sing.

    Ok so not special occasion food but really good for a quick dinner! I made my own brown rice and used frozen broccoli, and spicy cheese "product". Easy to make, everyone loved it. It will be made again in our house.

    We really loved this recipe. It was easy to make make and very filling. We really liked the broccoli and almonds in it.

    This was a good recipe. Mine was a little different as I made my own cheese sauce the night before. I turned out well. Much better the next day. I will probably make this again.

    My daughter really liked this. I found it a tad bland but a little salt and pepper went a long way. I made the recipe exactly. Even used processed cheese.

    This was easy and pretty tasty - a great weeknight meal that I will make again. I used minute brown rice rather than pre-cooked - it didn't take too much longer, but I also don't know that it made it made a significant difference. I also used the frozen "steam in a bag" broccoli, which worked perfectly and was extra easy. Make sure to add some extra salt and pepper for flavor when mixing all of the ingredients together. And definitely don't forget the toasted almonds - they gave it that extra bit of flavor and crunch that it definitely needed.

    Hubby and I really enjoyed this meal. I cooked my own brown rice which didn't add that much extra time to the preparation. I didn't toast the almonds which I will do next time. A wonderful meal, easy, very tasty and leftovers were great. A definite repeat.
