Chicken Breasts with Tomatoes and Olives

    An easy recipe that tastes great and is easy to adjust. We didn't have the dressing, so we mixed olive oil and white wine vinegar 1:1. Our grill had problems, so I brushed half the dressing over the chicken and sauteed over medium-high heat. We served it over couscous made with chicken broth and a bit of fresh parsley.

    This has all the right ingredients it seems but it had too strong of an olive taste. It still was decent, just not as good as many other cooking light chicken recipes.

    I made 6 chicken breasts so I used 24 olives (12 green, 12 kalamata). I used 2 T dressing with the tomatoes and olives and brushed the chicken breasts with 2 T as well. I used Newman's Own Olive Oil and Vinegar dressing and reduced-fat feta. I served this alongside CL's Cavatappi with Summer Vegetables. Simple and tasty; I will make this again.

    Made this the other night while home alone. Really enjoyed all of the flavors, plus it was a cinch to make. This one is going into my regular rotation since I always have these ingredients on hand.

    This recipe would have been 3 stars, but the easiness of it bumped it up a star. It is quick, but I agree with another person's comment that the olives are a bit overpowering-- and I love salty. I made my own oil and vinegar dressing from red wine and EVOO. I served it with whole-wheat cous cous and arugula salad. Good recipe for something quick and interesting.

    I love all of the ingrediants in the this recipe, so thought this dinner was going to be a slam dunk. Unfortunately, I was a bit suprised at how much I disliked it. I followed the directions exactly, and it looked fantastic on the plate, but I really thought the flavors were way too salty, "vinegary", and acidic. If I couldn't enjoy it, there is no way I would ever take a chance and make this for a guest.

    Recipe was both quick and easy, but the flavor and presentation was delicious and gourmet. My husband, teenage daughter and I all loved it. This will definitely be a go-to recipe. The mix of healthy olives and lightly cooked tomatoes is also a plus. I served this with steamed green and yellow beans and a black bean salad.

    This was a great quick and delicious recipe. Instead of chicken breasts, we used boneless chicken thighs and grilled with a simple seasoning of salt and pepper. I also made my own olive oil & vinegar dressing with 2 T olive oil , 1 T red wine vinegar, and pinches of salt, pepper, dry mustard, and italian seasoning. Great flavors for only having a few ingredients, and very fast to make - will definitely make again!

    Loved this recipe since we are currently awash with cherry tomatoes! I did pound the breasts even & broiled them with salt/pepper/garlic powder. Also, I did not use feta, but subbed parmesan & served over pasta with green beans. Easy menu to get to the table fast & tastes like you spent a lot more time.

    This was good. I made per recipe but in the future I will add onion and garlic to the tomato/olive mix. It was good on its own but I felt it was "missing" something. It's super simple and easy to make, will make again.

    Really easy and flavorful. I always have these ingredients so will get thrown in the rotation. Had broccoli and a little salad with it and found it all very satisfying.

    Loved this! So simple, easy but full of flavor. Used a red wine vinegar, olive oil and oregano dressing. Great weeknight meal. Would have given this four stars but prefer something a bit more complex for special occasions. This will be a standard in my weeknight repertoire however.

    My husband and I loved this, but did make some changes. I used about half the amount of olives, appx 2 tbsp of olive oil and 1 table spoon of balsamic vinegar in lieu of dressing and added one chopped up medium shallot (appx 2 tbsp). I put some Montreal Seasoning on the chicken before grilling instead of salt/pepper. We served it with grilled corn on the cob.

    This was actually surprisingly good and definitely fast to prepare. I was skeptical that something so simple would exceed expectations, but this did. I used balsamic vinnaigrette as the "sauce".

    Very good! Replaced fresh tomatoes with sun-dried in oil and halved the recipe. Yum!
