Chicken Breasts with Gorgonzola-Tomato Salsa

    We loved this dinner. The salsa was wonderful. I was wishing for some tortilla chips to finish the last little bit off with! I didn't pound the chicken breast, just cut them in half. I would definitely make this again and again!

    I cheated and just used jarred salsa - it was a busy weeknight. It was very quick to make with this shortcut and everyone loved it! Would try it by following the recipe for the fresh salsa next time.

    I made this recipe as part of the "casual supper' menu and really liked it. I cooked the chicken in about 1-2 tablespoons of olive oil which gave it a nice flavor. Highly recommended.

    I added a splash of balsamic vinegar to the salsa...wonderful!
