Chicken Breasts with Avocado, Tomato, and Cucumber Salsa

    Made to recipe using Foreman grill, so reduced cooking time to four minutes/side. Leftover chicken okay for quesadillas or salad. Cucumber salsa tasty & fresh.

    My fiance and I enjoyed this dish and will likely have it again! Very easy to make. The only substitution I made is that I did not have chipotle spice, so I used cayenne red pepper, salt and pepper on the chicken. The salsa mixture is tasty. We served it with baked tortilla chips.

    SO GOOD!! I seared Ahi Tuna instead of chicken for a change. I did not change anything else. It came out so fresh and clean and good. My boyfriend cannot wait for me to make this again!

    OH WOW! After making this numerous times now, I wouldn't change a thing! My husband asks for this dish, often! Every time avocados go on sale, I grab extras to make this dish. This has become my new go to recipe. psjohnso - I can't wait to try it on tuna. Thanks for the suggestion.

    This was a great weeknight meal. I substituted the cucumber for grilled corn and it was a hit. Will definitely make this again.
