I would make it again, instead of the corn oil I used EVOO and I would stick to the low sodium soy sauce or it would be too salty.

i loved this!!! very tasty, but i would change a couple things next time. although the bok choy is beautiful in quarters, it needs to be cut smaller for my toddler to eat. & do not add too much kosher salt to the chicken because the soy sauce (& I even used low sodium) is very salty! this was great with steamed white rice. I WILL make again and again.

i added onion powder to the chicken. i also added fish sauce and sesame oil to the soy sauce/bbq/scallions mixture - really good.

used chicken thighs and added cubed baby red potatoes (needed to use them up), and baby portobello mushrooms. turned out very tasty
