Chicken BLT Salad

    This is excellent - I soaked my chicken in buttermilk even before dredging in buttermilk/egg white mixture. The dressing is great, I may add a little light sour cream next time. Excellent recipe!!

    I cooked the chicken blt salad and dressing for dinner tonight and it was a hit. It was simple and delicious. My three young kids (8, 5, 4), my husband, my son and his girlfriend licked the plates clean. I cooked 2 chicken breasts without the panko since the kids don't like breaded chicken and my son's girlfriend has to avoid gluten, it still came out moist. Dinner was a success!

    OMG!! Fantastic!! I used romaine instead of the iceberg for more vitamins and nutrients!! This is totally guest worthy and will def. be making again!!

    This is fantastic! I realized right before I made it that I forgot to get buttermilk, so I used an equal amount of nonfat greek yogurt for both the chicken coating and the dressing. I just thinned it with a little bit of water. It worked great! The dressing is fantastic. I didn't find it to be too garlicky, but I love garlic.

    We adapted this recipe to shred the lettuce and serve in pita pockets. It ended up being just a (tasty) chicken cutlet sandwich, but the sauce was outstanding and will become a go-to recipe in our house for other meals.

    Made this last night as a quick meal before a regular meeting. I was not dissapointed. I just wish I had been hungrier & not in such a big hurry. As for changes, as I usually do, I salt & peppered the chicken about 1 hour prior to cooking it, rather than add s&p at the end on top of the panko, I believe the chicken should be seasoned as well as the breadcrumbs, so I divide the s&p between them, and have found that seasoning the chicken at least 1 hour before cooking truly gets flavor into it, I season all cuts of meat accordingly. I also added a few shakes of Tabasco to the buttermilk mix, love that spice!!! I didnt have time to make the dressing last night, but since the salad was so good anyway, it'll happen next time for sure, especially since most of the other reviewers raved about it.

    Super easy and deliciou.! My husband loves wedge salads so I new this would be crowd pleaser but when he said he could eat this every night I knew it was a keeper. Will be adding this to the heavy rotation!

    Loved the dressing (cut the amount of blue cheese in half and added it into the dressing), chicken was a bit bland and needed garlic salt added to the breading. Very good with wing sauce on the side for dipping into. Will definitely make again!

    This was delicious! The chicken was fabulous and we all thought it was better than any BLT chicken salad you would get in a restaurant. Chopped up the lettuce rather than serving it in a wedge.

    Made the pita bread with kalamata olives variation and really enjoyed, but the pita really needs to be toasted first and then allowed to sit in the dressing for a few minutes to absorb the flavor. Lots of good ideas and variations in this issue.

    OMG this is SOOOO good! I am single without kids, so I ate 6 meals of this. Usually, after eating a meal 6 times in a week, I am so tired of it, I don't want to eat it again for a very long time. Not this one. I finished the first recipe batch and was ready for more. The first time I made this, I did it exactly as the recipe was written, no variation, and it was delicious. The second time I made it, I chopped up the full head of lettuce, I used yogurt ranch dressing (rather than making the dressing the recipe calls for) and increased the bacon to 6 slices (so each serving gets 1 full slice). Also fantastic. This one will be a regular in my meal plans.

    I loved this. The chicken was really moist. And the combination of the wedge salad and chicken was unique and tasted great. The dressing was perfect.

    LOVE the dressing for this, though I do think the garlic was bit overwhelming. I skipped the skillet portion for the chicken and just baked the chicken entirely (I did drizzle EVOO over the chicken breasts so they would brown nicely). I've made the dressing several times now.

    This is a delicious salad. I have made it twice and will continue to make it a frequent "go t"o meal. The chicken is so well cooked with the buttermilk under the panko it comes out crisp and moist each time. The dressing is delicious as well. The only complaint is that I do not stick to the serving size!

    Our entire family enjoyed this! We'll definitely have it again. Next time I'll reduce the oil. Didn't seem like it was all needed to cook the chicken. Now we can't wait to try the variations on this recipe, and the other chicken recipes, from this issue!

    Delicious! I used yogurt thinned with milk for the buttermilk, and I served over spring greens instead of iceberg (I'm not a fan). I also cooked the chicken solely on the stove because it was a warm day and I didn't want to turn the oven on. I also added avocado, so I guess it kind of turned in to a Cobb salad, but it was wonderful, and my husband declared it fancy restaurant quality. I will certainly make again.

    Was truly delicious !!! We used goat cheese instead of blue. Didn't have garlic cloves so I used minced garlic in a jar. Just added another tsp of mayo . Then put the dressing in the refrigerator for a bit.

    Have made this a couple of times, I live in Fl and it's summer for a long time, so light salad recipes are always a hit. I added hot sauce to the buttermilk soak, but left the rest pretty much alone. We like the lettuce really cold and crisp so I soaked it in ice water for about 15 minutes then drained it quickly. That really helped. This will be a staple.
