Good stew. I would add more chicken stock next time so that it is a little more liquid. While the recipe was moist a lot of the liquid was absorbed into the Barley

I was pleasantly surprised with this recipe. I needed something quick, so I used a grocery store rotisserie chicken, which saved me a lot of time. I don't like onion so I was worried it would be too bland, but I increased the amount of each spice to about 1/3 tsp instead of 1/4, and added parsley. I also sauteed the frozen veggies in minced garlic. I think that helped a lot. I will probably add more broth next time, but we loved it! Will be great in the winter when I need something warm and easy at the last minute!

While I would not describe this stew as BLAND, I would say that the barley really does have a lot of soaking power and the few sprinkles of herbs in the recipe do not give it a lot to soak up in the way of taste. That being said, it was a very easy recipe and -- with all that fiber and hearty goodness -- it was satisfying as well. I will make this again but I will likely try to add a little pizazz to it (without adding additional calories).

I've made this recipe several times over the years. I keep coming back to it because it's a great variation on a classic recipe. I've added different vegetables before; my favorite addition is red bell peppers.

This has become a favorite at my house -- it's quick, easy, delicious -- and lends itself well to tweaks and variations of all sorts. This despite the fact that I've never been able to find quick-cooking barley, so either substitute instant rice or regular barley. We always try different spice combinations too. Delicious and filling!

This was a fantastic anytime soup. Very easy to throw together. Instead of premade chicken, I used fresh chicken and cooked prior to starting the barley. As I was cooking the chicken, I added the onions, garlic, thyme, salt, pepper, and a bit of poultry seasoning for an extra kick. I also substituted chicken stock for chicken broth as I wanted more depth of flavor. The quick cook barley really was a time saver. I will definitely make this again and again!

This was an excellent dish. Very tasty and filling. I didn't have quick cooking barley, so I used pearl barley and increased the cooking time. I had to add additional broth. Will definitely make this again.

Very good, simple to make and quite affordable! My Husband and I love soups, and I need to watch my cholesterol and Increase my fiber intake. This one was worthy of making on a regular basis. You can make it the main course, or soup to compliment a salad/main dish. Delicious.

I've made this soup a lot because it's easy, I sometimes add a can of drained diced tomatoes for added flavor
