This as such a great comfort food casserole and super easy for me to put together since I aleady had the leftover corn muffins and chicken. I omitted the canned mushrooms though because I was not in the mood for them and I added some fresh green onions. Other than that I followed the recipe exactly. It was a little dry but I liked it like that. The bottom layer gets nice and moist, while the top gets a little crispy. I am going to share this with my grandma to have for her weekly dinner get togethers with friends. I think she will love it.

Must add extra chicken broth and/or a can of cream of chicken or cream of celery soup. Had rave reviews when it was made it that way. My friend didn't, and it was way too dry. Good with cranberry sauce.

I made this last night. The cornbread topping was way too dry, will increase melted butter and incorporate it into the topping next time, the other tips here will be used too. Good flavor, just too dry.

I will add a can of cream of chicken or celery soup and a little more broth. It was good but a little too dry. I may mix it all up next time and top with cheese.
