Ingredients
- 2 teaspoons olive oil
- 1 cup sliced leek
- 1 cup sliced baby carrots
- 1/2 cup chopped green bell pepper
- 1/2 cup chopped celery
- 3/4 cup water
- 3 (14 1/2-ounce) cans fat-free, less-sodium chicken broth
- 2/3 cup uncooked alphabet pasta
- 2 cups chopped cooked chicken
- 2 tablespoons chopped fresh basil
- 1 tablespoon chopped fresh oregano
- 1/4 teaspoon black pepper
Preparation
- Heat oil over medium heat in a Dutch oven. Add leek and next 3 ingredients; sauté until tender. Add water and broth. Bring to a boil; add pasta, and cook 5 minutes or until pasta is done. Stir in chicken and remaining ingredients.
