Chewy Oatmeal Cookies

Yield 10 dozen

Ingredients

  • 1/2 cup butter, softened
  • 1/2 cup lard, softened
  • 1 cup sugar
  • 1 cup firmly packed brown sugar
  • 2 eggs
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 1/2 cups quick-cooking oats, uncooked
  • 1/2 cup chopped pecans
  • 1/2 cup flaked coconut

How to Make It

  1. Cream butter and lard in a large mixing bowl; gradually add sugar, beating well. Add eggs, and mix well.

  2. Combine flour, baking powder, soda, and salt in a small mixing bowl; add to creamed mixture, stirring until well blended. Add oats, pecans, and coconut, mixing well.

  3. Drop by heaping teaspoonfuls 2 inches apart onto lightly greased cookie sheets. Bake at 350° for 6 to 8 minutes. Remove from cookie sheets, and cool on wire racks.
