Yield one 9-inch pie


  • 5 eggs
  • 2 cups sugar
  • 1 tablespoon cornmeal
  • 1/4 cup plus 2 tablespoons butter or margarine, melted
  • 2 tablespoons lemon juice
  • 1 1/2 teaspoons vanilla extract
  • 9-Inch Pastry

How to Make It

  1. Beat eggs with a wire whisk or fork; add next 3 ingredients, mixing well. Stir in lemon juice and vanilla; pour into prepared pastry shell. Bake at 400° for 10 minutes. Reduce heat to 350°, and bake an additional 30 minutes.
