To prepare crust, weigh or lightly spoon flour into a dry measuring cup; level with a knife. Combine flour and next 5 ingredients (through cinnamon) in a medium bowl, stirring well with a whisk. Drizzle butter and juice over flour mixture, stirring until moistened (mixture will be crumbly). Reserve 1/2 cup oat mixture. Press remaining oat mixture into the bottom of an 11 x 7–inch baking dish coated with cooking spray.
To prepare filling, combine cherries, sour cream, granulated sugar, and remaining ingredients in a medium bowl, stirring well. Spread cherry mixture over prepared crust; sprinkle reserved oat mixture evenly over filling. Bake at 325° for 40 minutes or until edges are golden. Cool completely in pan on a wire rack.
I whipped these up as an easy, festive Valentine's Day treat for my oatmeal-cookie-loving husband. He adored them, as did a friend who came over the next day. I totally agree with the other reviewer on the great flavors and textures. A little scoop of low-fat vanilla ice cream made a nice addition.
I love these bars. They're sort of like cherry cheesecake and an oatmeal cooking all in one. I love the chewiness of the oatmeal crust, the creamy cherry/sour cream filling, and the freshness of the lemon zest. I also love how the cherries plump and get tender. So yummy! And they're so easy to throw together. I'll definitely be making these again and again!
