Cheesy Potatoes and Taco Meat

Ingredients
- 1 pound(s) ground beef
- 1 green pepper - diced
- 1/2 med red onion - diced
- 1 package(s) taco seasoning (mild)
- 1/2 bag(s) frozen corn
- 1/2 bag(s) country style frozen hash brown potatoes
- 8 ounce(s) Velveeta Cheese - cut into cubes
- Cooking Spray
Preparation
- 1. Preheat over to 350 degrees
- 2. In large skillet - brown ground beef
- 3.. add onions and green pepper to ground beef - cook 5 minutes until onions and peppers are soft
- 4.. add taco seasoning and 3/4 cup water -- cook 5 minutes
- 5. add 1/2 bag frozen corn and 1/2 bag hashbrown potatoes -- cook 5 minutes
- 6. spray 13 x 9 pan with cooking spray or line with aluminum foil -- pour taco meat and potato mixture into 13 x9 pan
- 7. put cubed pieace of velvet cheese into taco meat/potato mixture
- 8. bake for 30 minutes
- 9. remove from oven and stir to mix in melted velvet cheese -- serve and enjoy
