Cheesy Cauliflower and Veggies

  • 1 head(s) Cauliflower
  • 1/3 cup(s) butter or margarine
  • 1/3 cup(s) flour
  • 3/4 teaspoon(s) salt
  • 1/4 teaspoon(s) pepper
  • 2 1/2 cup(s) milk
  • 1 cup(s) frozen peas
  • 1/2 cup(s) fresh mushrooms sliced
  • 1 1/2 cup(s) cheddar cheese shredded


  1. In a covered saucepan cook cauliflower in a small amount of water until crisp tender. Meanwhile in another saucepan, melt the butter. Stir in flour, salt and pepper until smooth. Gradually stir in milk. Bring to a boil' cook and stir for 2 minutes or until thickened. Remove from the heat. Drain the cauliflower and add peas and mushrooms, 1 cup of shredded cheese and cauliflower to the milk mixture. Stir gently and then transfer to a greased casserole dish. Sprinkle with remaining cheese and bake for 15 minutes at 350 degrees covered. Then uncover and bake for 10 more minutes or until heated through.
