  2. 8 Strips of bacon, cooked, crumbled
  3. 1 pkg cream cheese, softened
  4. 1 jalapeno, seeded, diced
  5. 1 cup monterey jack shreded
  6. 1/2 scallion
  7. 1/2 tsp cumin
  8. 1/2 tsp corriander
  9. s & p
  10. 6 flour tortillas

  11. Directions

  12. Cook bacon in saute pan over medium-high heat until crisp, remove; reserve drippings. Blend all ingredients besides tortillas in a bowl and mix on medium speed. Add salt and pepper. Spread 1/4 cup of mixture over tortilla to edges. Roll tightly, then fry seam side down in hot oil with bacon drippings over medium heat until browned, about 5 minutes. Serve with sour cream, guacamole, salsa, or pico de gallo.If doubling the recipe, roll up and fr in batches so they don't get soggy.
