Cheese Muffins

Yield 1 dozen


  • 2 tablespoons butter or margarine, divided
  • 1/2 cup chopped onion
  • 1 1/2 cups biscuit mix
  • 1 cup (4 ounces) shredded sharp American cheese, divided
  • 1 large egg
  • 1/2 cup milk
  • 1 tablespoon sesame seeds, toasted

How to Make It

  1. Melt 1 tablespoon butter in a skillet over medium-high heat; add onion, and sauté until tender.

  2. Combine onion, biscuit mix, and 1/2 cup cheese in a medium bowl. Stir in egg and milk just until moistened. Spoon into greased muffin pans, filling half full. Sprinkle with remaining 1/2 cup cheese and sesame seeds; dot with remaining 1 tablespoon butter.

  3. Bake at 400° for 12 minutes or until golden. Remove from pans immediately, and serve warm.
