Cheese-and-Carrot Mashed Potatoes

    I made this recipe, but being a southern lady I could not bring myself to use frozen potatoes so I made my own mashed potatoes added a little velveeta and a little shredded cheddar and my kids loved them. The carrots mixed in were a great way to get them to eat their veggies and the shepards pie was great overall. I even froze half of it for later!

    My mother made these potatoes for 50 or more years. She called them "Pink Potatoes." In fact, I just took some out of my fridge for dinner tonight. This is a great way to get kids to eat carrots. This is a keeper.

    I also didn't want to do frozen potatoes so I used a traditional mashed potato recipe and then added the carrots and cheese. Wow! This is so yummy! Great idea to use baby carrots and microwave them. Cuts down on prep time. I mixed everything together with an electric mixer as well which made them extra creamy! Will definitely use this as a go-to for potato dishes!

    I just spent an hour making this meal and it is a complete disaster. Why does the recipe tell you to use 2 1/2 cups milk with frozen mashed potatoes???? It turned the potatoes into milk and ruined the entire meal. My only guess is that the milk is if you make the potatoes from scratch. big mistake in this recipe and if I was a more experienced cook I would have used common sense but I am not so its a mess and complete waste of time. Will have to throw the entrire thing away. Wasted alot of time and money on ingredients.
