This is a GREAT recipe for adult picnics. The sweet and savory combination goes really well with a salty side dish (like pickles!). Go easy on the butter as it can make the sandwich too heavy at home; it's great to pack for work without heating and then you can just microwave to melt the cheese.
Cheddar and Chutney on Sourdough
Charles E. Walton IV
- 4 thick slices sourdough bread
- 4 tablespoons chutney
- 6 ounces grated English Cheddar
- 2 tablespoons butter
- 1. Spread 2 bread slices with chutney. Add Cheddar to both slices; top with remaining bread slices, and press together gently.
- 2. Melt butter in a large cast-iron or nonstick skillet over medium-high heat. Add sandwiches to pan, and cook 3 to 5 minutes on each side or until cheese melts and bread is golden brown.
