Chanterelle Mushroom Risotto

    This was my first time ever making or eating risotto and I absolutely loved it and so did my 17 month old. I used brown rice instead. I didn't serve this dish with anything else and good thing too since it was so filling. Yummy!

    I have made this recipe many times...every year when chanterelles are in season. It is absolutely the best risotto going, and it showcases the mushrooms beautifully. Love it.
