Champagne-Shallot Mignonette Sauce

Ingredients

  • 1/2 cup Champagne vinegar
  • 1/2 cup Champagne or sparkling wine
  • 2 shallots, minced
  • 2 teaspoons minced fresh flat-leaf parsley
  • 1/2 teaspoon freshly ground black pepper

Preparation

Whisk together all ingredients in a small bowl. Cover and chill until ready to serve. Serve with oysters.
