Champagne-Shallot Mignonette Sauce
- 1/2 cup Champagne vinegar
- 1/2 cup Champagne or sparkling wine
- 2 shallots, minced
- 2 teaspoons minced fresh flat-leaf parsley
- 1/2 teaspoon freshly ground black pepper
- Whisk together all ingredients in a small bowl. Cover and chill until ready to serve. Serve with oysters.
