Cha-Cha Chicken Salad

    Delicious salad! I first made this for my daughter's bridal shower and it was a hit. It is now my go-to chicken salad recipe. I used 1/3 the fat cream cheese and light mayo. I added no salt in that I used a rotisserie chicken from the grocery store and the salted almonds called for in the recipe. I couldn't find the orange flavored cranberries, so just used the regular dried cranberries. Enjoyed this recipe very much!

    Made this recipe last night and tried it today- very tasty! I am not a big fan of chicken salad but this was good. I used a whole rotisserie chicken, cut up, and 1/3 less fat cream cheese. Will definitely make again.

    Every time I have served this, I get incredible reviews and recipe requests. You could do lots of variations, but I don't want to "mess" with the recipe. One of my all time favorites.

    I prepared this salad at for my Daughter's wedding shower and it disappeared. I got a teaspoon taste of it and it was Amazing!!! Which is what I heard from all the guest! I used roasted chicken from Sams Club and served it with crackers and a Spring Mix & Spinach salad with mandarin oranges and lemon & olive oil dressing. Its great for any occasion and I will be serving it for the Baby Shower as well.

    This was a very good recipe, but it looked a little like egg salad due to the yellow hue of the curry powder, and some thought it was a cheese ball because of the nuts on the outside. However, the chicken salad was delicious. I served with crackers but it would also be good on croissants.

    Have not tried this yet. I just wondered what kind of herbs you all have used, it did not say in the recipe. I very much want to try this as I love chicken salads. Thanks

    This is a hit wherever I take it! I used the sliced almonds you buy in a bag in the produce section to add to salads -- they are a little crunchier than others. Unfortunately, the orange-flavored cranberries are no longer available, but the plain ones are good, too. This is absolutely delicious!! Don't be afraid of the curry -- most people can't even figure out what the flavor is -- they just like it! I serve it on Club Crackers.

    Has anyone made this recipe without the curry? Not a fan of curry. Or substituted the curry with something else?

    This was a good recipe. It didn't make as much as I had expected, and I am not a huge fan of curry. I thought i'd try to recipe since there wasn't a lot of curry in the recipe, but it was still pretty strong for me. The rest of my family liked it, though.

    I used the regular cranberries and soaked them in orange juice overnite. They plumbed up and tasted just like orange Great recipe

    Absolutely delicious and so pretty!! Had to substitute Pomegranate Cranberries and next time will add a few green onions...but delicious as is!

    GREAT! Try some orange or tangerine zest in the cranbarries sprinkled with som of the juice or soaked..gives that great orange hint..and you can control the orange flavor!! Fresh herbs using just thyme and a little Rosemary works great.(.even a touch of ground sage). PARSLEY! Will always give a fresh herb taste without altering the other flavors..since it was asked..also other molds work great..small individ..for smaller group seated lunch!but GREAT RECIPE

    Made it last night. I used the blueberry-flavored cranberries and it added a unique flavor. I used 1/2 the cream cheese and light mayo. I used regular, sliced almonds (without toasting) and it was crunchy and good.

    Made this for a luncheon at work served with pita chips, it was a huge hit! I could not find orange cranberries so I used regular dried cranberries and added 2 tsp of dried grated orange rind. I used 1/3 fat free cream cheese and low fat Duke's mayo. The only other thing I did differently than directed was to mound the chicken salad in bowl, leaving room to put the crushed almonds around the sides, then pressed out the mound to create the coating before it was unmolded. It turned out beautiful and delicious. Will definitely make again.

    Sounds so great. I have just one question. Do you drain the crushed pinneapple or put in the whole can with the juice? Thanks.
