Celery, Walnut, and Parmesan Salad

    We enjoyed this recipe! I used grated cheese and could have cut back on the amount - it definitely coated the celery. It was a great dish with lots of flavor - and even my skeptical husband was surprised at how good it was!

    We loved it, didn't change a thing. Served it with a steak off the grill. Next time we'll serve it with something barbecued, like ribs!

    Liked the salad. I added grape tomatoes and cranberries to add color. I really like the tomatoes and will definitely do this again. I served it as a main dish (cup serving) with cottage cheese and fruit for a light lunch and would do the same for a light dinner (à la française). However, I'm not sure that it's going to hold me until dinner, so next time, I'm adding fresh wholegrain bread as an additional side.

    I really enjoyed this salad. It has a fresh and interesting flavor, and the textures work wonderfully together. It is great as-is, but I think adding a touch more lemon juice next time would be good too. It's a very simple and lovely side dish.

    This is terrific - and will become a summer staple for me! I grated the cheese vs. dice, and still delish! Believe you can easily cut back on nuts and cheese to spare calories without losing too much flavor...try first with all, then see for yourself.

    Delish! The key here is high quality, fresh olive oil. I also substituted pecorino romano for the Parmesan, as I like the flavor better. It makes a perfect light lunch paired with crusty fresh bread and pulls together so quickly!
