A traditional Salty Dog cocktail is comprised of vodka and grapefruit juice served in a glass with a salted rim. This non-alcoholic take on the classic brings a peppery twist into the mix with the addition of a celery simple syrup and bitters for depth. 3 cups thinly sliced celery
1 1/2 cups water
1/2 cup sugar
3 3/4 cups red grapefruit juice
5 teaspoons nonalcoholic bitters (such as Bittermilk)
1/2 teaspoon kosher salt

How to Make It
Combine first 3 ingredients in a saucepan over medium-high heat. Bring to a boil; reduce heat to low, and simmer 15 minutes. Remove pan from heat; cool completely. Strain and discard solids.
To prepare each cocktail, combine 3 tablespoons celery syrup, 3/4 cup juice, and 1 teaspoon bitters in a cocktail shaker. Shake well. Rim 5 glasses with kosher salt, and fill with ice. Divide the celery mixture evenly among glasses.
