Cauliflower Soup with Shiitakes

    Worthy of a Special Occasion

    I made this soup tonight for my husband and I and it was EXCELLENT! It was extremely easy to make and flavorful. I did substitute and low fat milk for whole milk and used a dried mixed bag of mushrooms instead of just the shitakes. The sherry vinegar was substituted for white cooking vinegar and it came out great! We also paired this with the roasted broccoli with garlic and anchovy recipe from cooking light.

    I made this soup tonight. My market didn't have the leeks, I substituted white onions instead, it still came out very good. Tasted very creamy and a bit spicy with the white pepper. I would make it again.

    I followed the recipe exactly, and this was terrible! The house smelled bad, the flavor was bland, and the texture had a gummy feel. My husband agreed. I pitched the soup and sent out for pizza.

    I made this for guests and we thought it was excellent. Very easy to make. The mushrooms are a critical component (can even make more than suggested). I suggest mixing the mushrooms throughout the soup and using the parsely as a garnish.
