Catfish Fajitas

    Worthy of a Special Occasion

    This was an amazing meal. I know a fish recipe is good when my fish hating dh gobbles it down and wants more. I used tilapia (because I dislike catfish) and used a McCormick's Mexican Fiesta marinade (it's a packet of seasonings that you add water & vinegar to) to marinate the tilapia in for about 15 min. Followed the instructions and used the fajita seasonings on the vegetables and a little more on the fish. Wrapped it all up in a jalapeno cilantro tortilla. Topped off with salsa. Served with ff refried beans and some mexican rice. This recipe made a huge amount of food and tasted fantastic. I highly recommend it.

    May have been better if I had used tilapia as another poster had done, but catfish was way to fishy for this recipe. i will not make this again.
