The onions are so amazing you're going to want to double the quantity. Seriously, they make this dish. And be sure you put them right on top, don't mix them in. This was delicious!
Cashew, Coconut, and Pumpkin Curry

I've made this as a main meal for myself and my son (we're vegetarian) and as a side dish for Thanksgiving dinner. A tasty way to prepare pumpkin, or any orange squash (butternut works well.) Delicious!

I have made this twice already. A great fall dish. I used red kuri squash both times. The first time I made it, I followed the recipe exactly ... with the exception of adding a little extra water at the end of cooking (to make a little more sauce), and a few dashes of fish sauce (for umami flavor and a little salt) and using curry leaves along with 3 bay leaves. It was AMAZING! The second time I made it, I had kids running around my feet and less time on my hands, so I cooked the pumpkin in one batch instead of two. It didn't cook as thoroughly and was not as tender as when cooked in two batches. So, take the extra time and cook two batches.

Would use more onions.....maybe not cook the cashews but rather chop and place on top...will play with it and do again..could be a five star with a bit of work.

It was pretty tasty, although I really wish it had more pumpkin flavor! Next time I think I'll use a different kind of pumpkin and possibly add some pumpkin puree. But even though it wasn't super pumpkiny, it was still really great and I'll for sure make it again!

This is really tasty. I didn't have curry leaves so used a teaspoon of curry powder and it was good. Also I used butternut squash instead of pumpkin. My husband wished there was meat in it... maybe some shrimp he thought.

This recipe is delicious! All of the people I've served it to rave about it and some have even asked me for the recipe. I have substituted bay leaves when I could not find curry leaves and while my guests love both versions to me the addition of curry leaves is amazing. This recipe is a winner!
