Ingredients

  • 2 1/2 tablespoons fresh lemon juice
  • 1 tablespoon olive oil
  • 1 tablespoon honey
  • 1/8 teaspoon salt
  • 1/4 teaspoon freshly ground black pepper
  • 3 1/2 cups grated carrot (about pound)
  • 1 1/2 cups diced Granny Smith apple (1 small)

Preparation

1. Combine first 5 ingredients in a medium bowl, stirring with a whisk. Add carrot and apple; toss well.
