Carrot-Orange Cookies

Ingredients
- 3/4 cup shortening
- 3/4 cup sugar
- 1 cup mashed, cooked carrots
- 1 egg
- 1 teaspoon vanilla extract
- 3/4 teaspoon orange extract
- 2 cups all-purpose flour
- 2 teaspoons baking powder
- 1/4 teaspoon salt
- 1/2 cup raisins
- 1/2 cup chopped pecans
Preparation
- Cream shortening in a large mixing bowl; gradually add sugar, beating until light and fluffy. Add carrots, egg, vanilla, and orange extract; beat well.
- Combine flour, baking powder, and salt; add to creamed mixture, stirring well. Stir in raisins and pecans.
- Drop dough by heaping teaspoonfuls 2 inches apart onto greased cookie sheets. Bake at 350° for 12 to 15 minutes. Remove from cookie sheets, and cool on wire racks.
