Carrot-nut brownies

Tips-1)These cookies are best made a day or two in advance.2)Stove in an airtight container. Variation-1)Cut brownies into larger squares(you can get 9 large squares from 1 pan).2)Top each square with a scoop of vanilla ice cream,hot caramel topping and a sprinkling of chopped walnuts.

  • 1/2 cup(s) butter or margarine
  • 3/4 cup(s) brown sugar
  • 1 egg
  • 1 cup(s) all-purpose flour
  • 1 teaspoon(s) baking powder
  • 1 teaspoon(s) cinnamon
  • 1/2 teaspoon(s) ginger
  • 1/2 teaspoon(s) salt
  • 1 cup(s) carrots
  • 1 teaspoon(s) vanilla
  • 1/3 cup(s) raisins
  • 1/2 cup(s) walnuts (chopped)


  1. 1)Melt butter.2)Combine with sugar in a mixing bowl.3)Blend together.4)Beat in the egg.5)Combine flour,baking powder,cinnamon,ginger,and salt.6)Blend into egg-butter mixture.7)Stir in grated carrots,vanilla,and raisins.8)Spoon batter into a buttered 8-inch square pan.9)Sprinkle with chopped nuts.10)Bake at 350`f for 25 to 30 minutes.11)Cool.12)Cut into 2-inch squares.
