- 2 1/2 teaspoon(s) baking powder
- 1 egg
- 1 3/4 cup(s) flour
- 2 good sized carrots
- 2/3 cup(s) milk
- 1/2 cup(s) raisins
- 1 teaspoon(s) salt
- 1/4 cup(s) sugar
- 1/3 cup(s) vegetable oil
- Mix flour, baking powder and salt in a bowl. Place milk, oil, egg, sugar and carrots in a blender or food processor and blend until carrots are very finely chopped Pour over dry ingredients. Mix and add raisins. Spoon into greased muffin pans, filling 2/3 full. Bake at 375 degrees for 25 minutes. Makes 8-10 muffins.
