Carrot Cake

Ingredients

  • Preheat oven to 325
  • Grease and flour 2 9inch round pans.
  • INGREDIENTS:
  • 3 cups flour
  • 2 1/2 cups sugar
  • 1 tablespoon baking soda
  • 1 tablespoon cinnamon
  • 1 teaspoon sald
  • 4 eggs
  • 1 1/2 cups oil
  • 1 teaspoon vanilla
  • 2 cups packed shredded carrots
  • 8 ounces of chopped walnuts
  • 1 cup applesauce
  • PREPARATION:
  • In large bowl, mix flour, sugar, soda, cinnamon and salt.
  • In small bowl, with fork, beat eggs slightly. Stir in oil and vanilla. Add this mixutre, plus carrots, walnuts, and applesauce into large bowl with dry ingredients. Stir just until moist (DO NOT USE MIXER).
  • Bake in pans 45 minutes MINIMUM. Check with a piece of dry spaghetti in center of cake for doneness. This takes a LONG LONG time to bake all the way through.
  • FROST WITH CREAM CHEESE FROSTING.
