You can leave out the carrot and add another 3/4 cup shredded cabbage if your low-carb plan does not allow carrots. The carbo rating will be the same.

Ingredients
- 1 1/4 cups shredded cabbage
- 3/4 cup shredded carrot
- 1/4 cup grated Red Delicious apple
- 1/4 cup crushed pineapple in juice, drained
- 1/4 cup light mayonnaise
- 1 tablespoon lemon juice
- Cabbage leaves (optional)
Preparation
- 1. Combine first 6 ingredients in a medium bowl; toss well. Cover and chill thoroughly.
- 2. Spoon coleslaw into a cabbage-lined bowl before serving, if desired.
