Ingredients

  • 1 1/4 cups shredded cabbage
  • 3/4 cup shredded carrot
  • 1/4 cup grated Red Delicious apple
  • 1/4 cup crushed pineapple in juice, drained
  • 1/4 cup light mayonnaise
  • 1 tablespoon lemon juice
  • Cabbage leaves (optional)

Preparation

  1. 1. Combine first 6 ingredients in a medium bowl; toss well. Cover and chill thoroughly.
  2. 2. Spoon coleslaw into a cabbage-lined bowl before serving, if desired.
