  15. Bring pineapple, rum, lime juice and sugar to a boil in a medium saucepan. Reduce heat to medium and simmer for 15 to 20 minutes or until most of the liquid has evaporated. Remove from heat and whisk in butter until melted. Stir in cilantro and pepper, if you like. Serve warm over cooked ham slices.
