OMG This was so good. I put the chicken on the skewers. I cooked the onion, peppers, pineapple, and tomatoes in a wire basket seperately on the grill. The store didn't have fresh ginger for the marinate so I used 1/4 tsp. of ground ginger. I also put 1/4 tsp of garlic powder instead of garlic salt in the lime-cayenne butter because I used salted butter and thought that it might be to salty. Can't wait to make again. Might try it with shrimp next time.

I saw this recipe in Coastal Living's October 2010 issue and just knew I had to try it. Awesome! Great flavor! I substituted a large shallot in place of the garlic (since one of us isn't a fan of garlic) and 1/2 tsp. ground dried ginger since I didn't have any fresh. Served this dish with white rice this time. If appetites are not very big I think this would even serve six. We had leftovers which heated well in a covered ovenproof dish at 350 degrees. The recipe is definitely a "keeper" and I will make again and again. Also would be good for entertaining as we grill all the time.

Fabulous!!!! we substituted worchestershire for soy sauce and omitted ginger - We will try this with shrimp - love it!!!

I googled and found the RECIPE FOR THE LIME CAYENNE BUTTER: 1/2 cup butter 1 1/2 tablespoons fresh lime juice 1/2 teaspoon cayenne powder 1/2 teaspoon garlic salt. I have not tried it yet, but wanted to share the recipe. Had to give a rating to post.

made this as directed and it was easy and tasty. beautiful presentation for company - they even got in on the fun by helping chop peppers, cube pineapple, and thread skewers. I serve with white rice and jalapeno-lime black beans. mmmm. definitely need to make at least once a month over the summer!
