Caramelized Pear Cannoli with Praline Sauce

    Served this for dessert at a recent card party...the ladies were licking their plates (figuratively speaking). Made a few changes and shortcuts, which worked out fine. Cut a couple of pears into wedges and caramelized them along with the chopped pears...placed them on the plate with the cannoli for a lovely presentation. Used Cool Whip instead of whipping cream in the filling and bottled hot caramel sauce instead of the praline sauce. The big plus is that the canollis can be made ahead of time and put together with the plating elements just before serving.
