Caramelized Onion and Horseradish Mashed Potatoes

    Followed the suggestions about the mustard, thanks. Turned out great, provided an unexpected variation on mashed potatoes. Served with CL double-cheese meatloaf but would probably be much better with grilled steak.

    Did not like at all. A lot of work, I made a large batch for Christmas. I think the mustard ruined it and I didn't use as much as it called for. I've made caramelized twice baked potatoes in the past, one of my favorites, and thought I would love these. I will not make them again. I never thought I would not like a potato dish, but I was wrong. yuk...Don't waste your time. (by the way, it takes a lot longer to caramel the onions then the recipe says)

    I served this and another mashed potato recipe at Thanksgiving. I agree that the mustard taste was too strong. I felt like the tartness competed with the gravy. I would try again with less mustard next time. I caramelized extra onions and froze the extra in anticipation of making again.

    this was just perfect & i did not need 10 servings (is this to serve an army?) so i made 1/4 of it. who does not love potatoes with horseradish? simple & delicious. the balsamic puts it over the top. don't leave it out.

    These were very tasty! I cut the recipe in half and reduced the mustard to 1 tablespoon (for half the recipe.) My husband absolutely loved these. They had great flavor from the horseradish and mustard. I think they would go great with roast beef. Next time, I may add some cooked bacon to the final potatoes.

    I have been making horseradish mustard for years that come out great. I just add about 1 tablespoon of a horseradish mustard for ever 2 lbs of potatoes (I usually make my them in 2lb batches). Some of the reviews mentioned using with gravy but I would suggested eating these potatoes on their own.

    I enjoyed this twist on mashed potatoes - contrary to other raters, I did not find the amounts of mustard or horseradish to be too much. Paired great with tuna, I think because the mashed potatoes were slightly reminiscent of tartar sauce. Didn't love the color though, as the mustard made the potatoes a dullish brown, and would use less onion..
