Caprese Zucchini

Yield Serves 4 (serving size: 4 zucchini slices, 2 tablespoons tomato mixture, and 1 tablespoon cheese)
Caprese Zucchini gives a nod to the classic Caprese salad as an Italian-inspired topping for this summer veggie.

Ingredients

  • 2 medium zucchini, sliced
  • 1/2 cup diced seeded tomato
  • 2 tablespoons chopped fresh basil
  • 2 teaspoons olive oil
  • 1 teaspoon red wine vinegar
  • 1/4 teaspoon kosher salt
  • 1/4 teaspoon freshly ground black pepper
  • 1 ounce shredded part-skim mozzarella cheese (about 1/4 cup)

How to Make It

  1. Grill zucchini 2 minutes on each side.

  2. Preheat broiler. Combine tomato, basil, olive oil, vinegar, salt, and pepper in a bowl. Arrange grilled zucchini on a foil-lined baking sheet; top evenly with tomato mixture and mozzarella cheese. Broil 2 minutes or until cheese melts.
