Caper Vinaigrette

Yield Makes 1 cup

Ingredients

  • 1/4 cup red wine vinegar
  • 1 1/2 teaspoons Dijon mustard
  • 1 shallot, minced
  • 1/2 teaspoon lemon zest
  • 2 tablespoons fresh lemon juice
  • 1 tablespoon capers, coarsely chopped
  • 1 teaspoon Worcestershire sauce
  • 1/4 teaspoon salt
  • 1/4 teaspoon freshly ground black pepper
  • 1/2 cup extra virgin olive oil

How to Make It

  1. Whisk together first 9 ingredients in a small bowl, or shake in a jar with a tight lid. Add oil; whisk or shake until blended.
