Combine ground chuck, 1 teaspoon salt, and 1/2 teaspoon pepper; mix well, and form into 4 patties.
Place each beef patty on a 12- x 9-inch sheet of heavy-duty aluminum foil. Top each patty with sliced onion, potato, and carrots; sprinkle with salt and pepper to taste. Wrap foil around meat and vegetables, and seal securely.
Place aluminum foil-wrapped dinners, sealed side down, 3 inches from hot coals. Turn packages after 10 minutes, and cook an additional 20 minutes or until vegetables are tender when pierced with a fork.
