Camp-Style Potatoes

Yield 6 servings


  • 1/2 pound bacon, diced
  • 1 medium onion, chopped
  • 1 medium-size green pepper, seeded and chopped
  • 2 1/2 pounds potatoes, scrubbed and sliced
  • 1 (10-ounce) can tomatoes with chiles
  • Salt and pepper to taste

How to Make It

  1. Cook bacon in a large skillet until browned. Add onion and green pepper; sauté until tender. Drain off fat, if desired.

  2. Add potatoes and tomatoes, stirring lightly. Reduce heat; cover and simmer 15 minutes or until potatoes are tender. Add salt and pepper to taste.
